Our Team has created a fantastic menu to celebrate the last day of 2017 and to welcome our New Year. Locally sourced ingredients that will paired wonderfully with our selections of cocktails and wines.

Amuse bouche: Membrillo-tinged Sparkling Wine

BEGIN:
Roasted oyster mushroom & Star Anise consommé
Pairing: Château Soucherie; Anjou Blanc (Chenin Blanc); Loire Valley, France.

CONTINUE:
Array of: mole poblano tartare, chorizo de cabra,fermented nopal, cheese, heritage grain crackers
Pairing: Vega de Tera; Tempranillo; Castilla y Leon, Spain.

ARRIVE:
Juniper-brined duck breast, tejocote-lime mezcal demi, parsnips; or

Pan-seared skin-on Mexican snapper, stone fruit saute, achiote white wine butter; or

Stacked local vegetable croquettes, spiced citrus gastrique, wilted mustard greens & forage
Pairing: Oeno; Pinot Noir; Russian River Valley, California.

CONCLUDE:
Hibiscus flan, palanqueta of pepita & gold leaf & ash; or

Piloncillo & Pork pate & Prickly Pear Chorizo, Brûléed, Cardamom-Black Pepper cajeta
